Will the text stay sharp and selectable?
Yes in lossless mode: compression targets the embedded images, not the vector text, which is untouched and still searchable. The strong image mode rasterizes pages, which is the right choice for scans but turns text into pixels.
Why did my PDF barely shrink?
Because there was little to remove. Text-only PDFs are close to their minimum size already — compression pays off on scanned pages and photographs.
